Bailey's Irish Whiskey & Cinnamon, Coffee Chip Scones

Bailey's Irish Whiskey & Cinnamon Coffee Chip Scones






Preheat Oven:  400 F

1 3/4 Cups Self Rising Flour*
1/3    Cup Granulated Sugar
5 1/2 Tbsp Unsalted Sweet Cream Butter
2 Tbsp  Instant Coffee
1/2 Tbsp Cinnamon
100 ml Bailey's Irish Whiskey

*{If using AP Flour you will need to add 2 tsp Baking Powder & 1/2 tsp Salt}


In a large bowl mix flour, sugar, and cinnamon. Then cut in the melted butter until the mixture resembles coarse crumble. Then mix in instant coffee. Once all  blended together slowly pour in Bailey's and mix until the mixture becomes a stiff dough constancy. 

Take batter and roll out to a 1 1/2" thickness and cut into 3"x 3" squares, then cut again on a diagonal.

Place on a well greased cookie sheet and bake for 12 to 15 minutes (or until golden brown).
Move to cooling rack and allow to cool fully until serving.
